<p>DORADA A LA SAL EN HORNO DE LEÑA<br />
Ingredientes para 4 personas</p>
<p>4 doradas</p>
<p>sal para hornear</p>
<p>Tiempo de realización 30 minutos</p>
<p>Preparación</p>
<p>1.Algunos cocineros dejan la dorada entera sin destripar,a mi me gusta mas hacerlas limpias.</p>
<p>2. Cubrir el fondo de una fuente de hornear con sal gruesa. Mojar la sal con un poco de agua, pero muy poco,normalmente este tipo de sal ya viene humeda</p>
<p>3. Colocar las doradas encima de la fuente y taparlas  con el resto de la sal, hasta que queden totalmente cubiertas,compactando bien la sal en torno a la dorada,que no quede nada al aire para que no quede salada<br />
4. Introducir en el horno, precalentado a 200 ºC, unos 30 minutos, hasta que la sal se agriete un poco y se ponga de color tostado</p>
<p>5. Retirar el caparazón de sal con mucho cuidado para que no se rompa la dorada,si ves que el centro de la dorada queda crudo,puedes meterlas de nuevo en el horno,ya sin sal,envueltas en papel de aluminio para que se calienten rapido y no pierdan sus jugos y servirla,podeis acompañarla  de salsa alioli o de patatas asadas.</p>

<p><strong>Preparación</strong><br />
Unir el huevo, las yemas y la ralladura del limón con el azúcar y la manteca, en otro bol la harina y el polvo de hornear, luego unir todo agregando la leche y formar una masa uniforme. Poner en la tartera, decorarla con el dulce de membrillo y las tiritas de masa. Cocinar en horno moderado alrededor de 35 minutos.</p>

pimentón dulce

comino molido (no exagerar)

<p>Para hacer aproximadamente 3 docenas.</p>
<p><strong>Ingredientes</strong></p>
<p>¾ kg de carne de ternera picada<br />
4 cebollas medianas<br />
½ pimiento verde<br />
½ pimiento rojo<br />
¼ kg aprox. ajos tiernos<br />
½ lata de tomate triturado<br />
1 cda mantequilla<br />
1 cubito caldo carne<br />
150 gr aceitunas verdes<br />
pimentón dulce<br />
pimentón picante<br />
comino molido (no exagerar)<br />
ají molido<br />
sal<br />
1 cdita de azúcar</p>
<p>optativo: huevo cocido picado</p>
<p><strong>Preparación</strong></p>
<p>Rehogar las cebollas, pimientos y ajos tiernos picados, hasta que casi se pegue a la olla.<br />
Luego agregar la cda de mantequilla, el cubito de caldo y agregar la carne picada revolviendo constantemente para mezclarlo con las verduras, a fuego alto, lo justo para blanquear la carne.<br />
Retirar del fuego, añadirle el tomate triturado, el azúcar, los 2 tipos de pimentón, el ají molido y corregir el punto de sal.<br />
Añadirle las aceitunas sin hueso y cortadas en rodajitas.<br />
Si se le pone huevo cocido picarlo, es mejor agregarlo en cada empanadilla al armarlas, porque si se revuelve con lo demás, se deshace mucho.<br />
Rellenar los discos de empanadillas, humedecer el borde con agua y cerrar bien. Poner en fuente de horno aceitada o sobre papel vegetal limpio, pintarlas con huevo batido y a horno 200 – 220 º C hasta que estén doradas.</p>

			<content:encoded><![CDATA[<p>Esta es una receta que nos envía desde México, nuestro amigo, el Ing. Oscar Omar Escobar Vázquez. Nos cuenta que le gustaría participar del horno viajero; pero lamentablemente el horno solo estará viajando por España.<br />
Es un borrego (peli buey) el que cocinamos aquí en nuestra casa, porque el chivo es más oloroso, el borrego es más grasoso y el pelybuey está en término medio de estos dos.</p>
<p><strong>Ingredientes:</strong><br />
Necesitamos muchas hierbas frescas muy aromáticas.<br />
1 borrego (peli buey)<br />
1 Cabeza de Ajo<br />
c/n Vinagre Blanco<br />
c/n Adobo Achote<br />
c/n Mejorana<br />
c/n Laurel<br />
c/n Tomillo<br />
c/n Yerbabuena<br />
c/n Perejil<br />
c/n Epazote<br />
c/n Sal ( bastante sal calculando el peso de la carne)</p>
<p><strong>Procedimiento:</strong></p>
<p>Esto se pica bien picadito y reservamos. Por otro lado cortamos bastantes<br />
cebollas en rodajas.<br />
Tenemos ya el borrego destazado en porciones regulares, preparamos una charola con metálica con escurridor esta es para meter al horno en la licuadora molemos 1 cabeza de ajo con vinagre blanco y un pedazo de adobo achote, bastante sal calculando el peso de la carne.<br />
En una charola acomodamos una parte de carne la envaramos bien con las hiervas frescas que licuamos anteriormente.<br />
Después ponemos más hierbas de olor encima, luego agréganos las rodajas de cebolla, después carne y así sucesivamente capa tras capa hasta que termines con los ingredientes.<br />
Tapamos bien y va al horno (bien sellado) para que conserve los líquidos.</p>

<p>Muchos años atrás, durante mi niñez en el campo, no teníamos nada parecido a las grandes panaderías de hoy en día. Por lo cual era mi mamá con ayuda de alguna de mis hermanas mayores, y más adelante conmigo misma, que se encargaba de preparar todo tipo de masas para nosotros. En ese entonces se usaba el horno de barro todos los días, nunca llegaba a enfriarse, porque por la misma forma y material conserva muy bien su temperatura, incluso en los días más fríos. Cuando alguno de mis hermanos lo encendía, llenándolo de leña para que se vaya calentando, todavía estaba tibia la superficie de las paredes y el piso.<br />
Hoy la costumbre de cocinar en hornos de barro ya no se ve muy seguido, pero las preparaciones de ese entonces las trato de seguir haciendo porque son cosas que me llenan de recuerdos. Eran tiempos más simples, una vida más tranquila y no tan vertiginosa como la que vivimos hoy, no es que se trabajaba menos que ahora, la jornada era de sol a sol, pero se hacia de otra manera, con otra predisposición, nunca conocí siquiera el significado de la palabra estrés hasta que vine a la ciudad. Por eso, recetas como estas las comparto con ustedes desde el fondo de mi corazón, y espero que puedan vivir gratos momentos con sus seres queridos, y que algún día recordarán, tal y como me pasa a mí.<br />
Son bizcochos ideales para acompañar el mate, o para los extranjeros que no disfrutan de este placer, también quedan muy ricos con un café con leche. Es una receta rápida de biscochitos, sin levadura y sin secretos. Ideales para un día fresquito o lluvioso cuando tengan ganas de comer algo salado para acompañar unas facturas o alguna torta. Como se puede ver en las fotos, yo siempre hago algunos gorditos para los que les gustan así, y otros finitos que los pincho con un tenedor y quedan bien crocantes como me gustan a mi. Con estas cantidades no salen demasiados, por si los quieren probar, y si después quieren hacer más cantidad solo multiplican los ingredientes y listo.</p>
<p><strong>Ingredientes</strong><br />
250 g de harina leudante<br />
75 g de grasa vacuna<br />
1 cdita de sal<br />
100 cc de agua fría</p>
<p><strong>Procedimiento:</strong><br />
En un recipiente colocamos la harina con la sal y le agregamos en el centro la grasa y el agua.<br />
Mezclamos todo hasta formar una masa blanda que no se pegue en los dedos.<br />
Sobre una superficie enharinada estiramos la masa del grosor deseado. Como siempre les digo eso depende de como les gusten los bizcochos.<br />
Cortamos con un cortante y acomodamos sobre una placa. Si queremos que sean más finitos y crocantes los pinchamos con un tenedor.<br />
Llevamos a horno suave unos 15 min. aprox.<br />
Retiramos y dejamos enfriar mientras preparamos el mate.</p>
